Coconut sugar, also known as coconut palm sugar, is a natural sweetener derived from the sap of the coconut palm tree (Cocos nucifera). It has been used as a traditional sweetener in Southeast Asian countries for centuries. To obtain coconut sugar, farmers collect the sap by making a cut in the flower bud of the coconut tree and then boiling the sap until it thickens and crystallizes into granules.
